ENJUKU Miso Soup is made of "Enjuku Koji Miso" from organic soybeans, Japanese rice and sun-dried sea salt. "ENJUKU Miso Soup" does not contain any artificial flavors, but instead derives its rich aroma and flavor from the high proportion of koji (rice malt) used. To bring out the full flavor of truly fresh miso, Hikari Miso makes "ENJUKU Misp Soup" with a special process that does not employ heat treatment, leaving the cultures and enzymes of the miso intact.
